1. Acid Resistance

Nisin is highly stable under acidic conditions. When the pH of the solution is low, such as at pH 2 or 2.5, it maintains a high level of stability. Specifically, its solubility at pH 2.5 is 12%, and it exhibits outstanding heat resistance in an acidic environment. Furthermore, it can withstand high-temperature treatment (121°C for 15 minutes) at pH 3.0. This demonstrates that nisin has good heat resistance under acidic conditions.

2. Heat Resistance

The heat resistance of nisin is closely related to the pH of the solution. Under acidic conditions, such as in dilute hydrochloric acid with a pH of 3, it can retain 100% of its activity even after high-temperature treatment at 121°C for 15 minutes. However, as the pH increases, its heat resistance decreases. For example, when dissolved in skim milk with a pH of 6.5, nisin loses only 15% of its activity after pasteurization at 85°C for 15 minutes. At higher pH values, its heat resistance diminishes further.
