Natamycin mainly inhibits the growth and reproduction of microorganisms through the following action mechanisms in food preservation, so as to achieve the purpose of preservation:

Interaction with the Cell Membrane: Natamycin is lipophilic and can preferentially bind to ergosterol in the microbial cell membrane to form a stable complex. This binding will change the permeability of the cell membrane, causing the leakage of important substances (such as amino acids, electrolytes, etc.) inside the cell, disrupting the normal physiological functions of the cell, and thus inhibiting the growth of microorganisms, ultimately leading to the death of microorganisms.

For example, it can inhibit the enzymes related to processes such as cell respiration and substance metabolism, making it impossible for the microorganisms to carry out normal metabolism, thereby inhibiting their growth and reproduction.

Influence on the Synthesis of Genetic Material: Natamycin may also have an impact on the synthesis of the genetic material of microorganisms. It can act on the synthesis process of DNA or RNA, preventing the replication and transmission of genetic information, so that the microorganisms cannot divide and multiply normally, thus achieving the effect of preservation.
