Nisin: Nisin is a natural antibiotic composed of 34 amino acids, which has an antibacterial effect on Gram-positive bacteria. Potassium sorbate: Potassium sorbate is a commonly used food preservative that can inhibit the growth of bacteria and molds. Natamycin is mainly used to inhibit the growth of yeasts and molds. The two have different modes of action and can work synergistically. When used in combination, they can expand the antibacterial spectrum and achieve the purpose of controlling the growth of fungi and inhibiting the growth of bacteria. When the concentration of the natamycin treatment solution in the compound use of the two is 0.4g/kg and the potassium sorbate is 8g/kg, it can effectively inhibit the growth of bacteria and fungi in mooncakes, and can make the shelf life of mooncakes reach more than 60 days under the constant temperature storage condition of 28°C.

Calcium propionate: Propionate salts are the most effective organic acid preservatives for the storage of pastries and bread. The effective component, propionic acid molecules, can dehydrate the cells of microorganisms, penetrate the cell walls of microorganisms, inhibit the activity of intracellular enzymes, and inhibit the reproduction of microorganisms. However, the antibacterial spectrum is relatively narrow, mainly acting on molds, having a limited effect on bacteria, and having no effect on yeasts. When used in combination with natamycin, the hypertonic environment formed outside the cell wall by propionic acid molecules accelerates the fusion of natamycin with the sterol substances in the cell membrane, changes the permeability of the cell membrane, and causes the cells to die rapidly, thus achieving a better anti-corrosion effect.
