ε-Polylysine hydrochloride For High Effectiveness

Highly effective ε-polylysine hydrochloride, with its unique characteristics such as broad antibacterial spectrum, high temperature resistance, strong water solubility, wide pH range, strong synergistic enhancement, high safety, and dual health-care function, has vast application prospects in the fields of food, daily chemicals, medicine, and more.

Highly effective ε-polylysine hydrochloride can effectively inhibit Gram-positive and Gram-negative bacteria, yeasts, molds, viruses, and other microorganisms. For instance, its minimum inhibitory concentration (MIC) against Escherichia coli is 40mg/kg, against Staphylococcus aureus is 50mg/kg, and against Bacillus subtilis is 15mg/kg, demonstrating its extensive antibacterial ability.

Under high-temperature conditions (maintained at 121°C for 30 minutes), ε-polylysine hydrochloride does not decompose, thus it can participate in the product's heat treatment process and be processed with raw materials, providing great convenience for its application in the food processing industry. ε-Polylysine hydrochloride is easily soluble in water, with a solubility of at least 500g/L, making it easy to mix and use during food processing and storage. It also exhibits strong bactericidal ability under pH conditions ranging from 2 to 9, which can compensate for the low activity of other preservatives under neutral and alkaline conditions.

When used in combination with other food additives such as vinegar, ethanol, glycine, and organic acids, ε-polylysine hydrochloride can produce synergistic enhancement effects, significantly improving its killing effect.

The acute toxicity test LD50 of ε-polylysine hydrochloride is 5g/kg, which is comparable to that of table salt. After ingestion by humans, it can be degraded into lysine nutrients, absorbed and utilized, without any toxic or side effects. It is classified as a natural preservative in Japan's additive directory, and the US FDA has also recognized it as a GRAS product, further proving its safety.

Research has shown that ε-polylysine hydrochloride can effectively inhibit enzyme activity and fat absorption, thus reducing the occurrence of obesity, demonstrating its potential health-care function.
