Nisin preservative powder is a widely used natural preservative in the food industry. It is a polypeptide substance produced by Lactococcus lactis, classified as a natural preservative. Through pathological studies and toxicological tests, nisin has been proven to be completely non-toxic. It can be degraded by digestive enzymes into amino acids, leaving no residue, does not affect beneficial gut bacteria, does not cause drug resistance, and does not exhibit cross-resistance with other antibiotics. It is very stable under acidic conditions but almost insoluble under alkaline conditions.

Nisin specifically binds to the outer membrane protein PBP5 on the cell membrane of Gram-positive bacteria, interfering with bacterial cell wall synthesis and thereby exerting its antibacterial effect. It has high selectivity, being lethal only to Gram-positive bacteria and non-toxic to humans and animals, making it suitable for food preservation.

Due to its antibacterial and preservative properties, nisin can delay the spoilage process of food and maintain its freshness. It can effectively inhibit the growth of various spoilage microorganisms, including Staphylococcus and Escherichia coli, by disrupting the cell walls of Gram-positive bacteria, thereby extending the shelf life of food.

Nisin has been widely used in various food fields such as dairy products, canned goods, fish products, and alcoholic beverages. In these fields, it is used as a preservative to reduce or prevent bacterial contamination, maintaining the freshness and safety of food.

Depending on the type of food and processing requirements, the amount and method of using nisin vary. For example, adding 0.03-0.05% nisin to fresh milk can inhibit heat-resistant bacteria that cause spoilage in fresh milk and dairy products, extending the shelf life by 2-3 times. When using, nisin should be dissolved in water or a dilute acid solution to prepare a suspension of a set concentration or directly added to food with thorough mixing.

As a natural, non-toxic, and effective food preservative, nisin powder has broad application prospects in the food industry. Its unique antibacterial and preservative effects, along with its harmlessness to humans, make it an ideal alternative to chemical preservatives. Its stability and solubility at different pH levels also provide more possibilities for food processing.
