ε-Polylysine hydrochloride is indeed regarded as an excellent preservative in the beverage industry. Its superior preservative properties and wide range of applications make it a vital assistant in this field.

ε-Polylysine hydrochloride is a food additive derived from controlled fermentation of Streptomyces diastatochromogenes, followed by adsorption, desorption, and purification using ion exchange resins. It has high efficiency and broad-spectrum antibacterial properties, effectively inhibiting Gram-positive bacteria, Gram-negative bacteria, molds, yeasts, and viruses. Additionally, it has good water solubility, no off-flavors, and does not affect the original color and flavor of foods, making it widely used in the beverage industry.

Since ε-polylysine hydrochloride does not affect the original color and flavor of beverages, it can achieve preservative and freshness-keeping purposes while maintaining the quality of the beverages. It can also be used in combination with other preservatives or additives, further enhancing the preservative effect and quality of the beverages through synergistic action.

Derived from microbial fermentation, ε-polylysine hydrochloride is a natural, safe, and non-toxic preservative. The human body can completely absorb and decompose it into essential lysine, so its use in beverages poses no health risks.

In practice, several cases have demonstrated the effectiveness of ε-polylysine hydrochloride in beverage preservation. For example, in the preservation of coconut juice beverages, while the effect of using ε-polylysine hydrochloride alone is limited, combining it with other preservatives (such as sodium benzoate, EDTA, etc.) can significantly enhance its antibacterial effect. Experimental results show that adding a certain amount of ε-polylysine hydrochloride-EDTA formulation to coconut juice beverages and storing them at 37°C for 30 days results in a 98% antibacterial rate against bacteria and a 96% antibacterial rate against molds and yeasts.

With its high efficiency, broad-spectrum antibacterial properties, good water solubility, and lack of off-flavors, ε-polylysine hydrochloride has shown excellent preservative effects in the beverage industry. It not only extends the shelf life of beverages but also maintains their quality and safety, making it an indispensable preservative assistant in the beverage industry.
