ε-Polylysine hydrochloride is a food additive obtained from the controlled fermentation broth of starch-amylase-producing Streptomyces through ion exchange resin adsorption, desorption, and purification. It is an amino acid with antibacterial properties, safe and eco-friendly, easy to blend with other products, and has been approved as a safe food preservative in countries such as the United States, Japan, South Korea, and China. Experiments in mice have confirmed that it does not produce toxic or side effects on organisms. ε-Polylysine hydrochloride powder is widely and effectively used in food preservation.

ε-Polylysine hydrochloride exhibits good inhibitory effects on the growth and reproduction of Gram-positive bacteria, Gram-negative bacteria, and fungi. It achieves antibacterial effects by electrostatically adsorbing onto cell membranes, altering membrane permeability, disrupting cell structure, and inhibiting cell metabolism.

However, when combined with other preservatives such as sodium benzoate and EDTA, the antibacterial effect is significantly enhanced. The recommended blending ratio is 0.08g/kg ε-polylysine hydrochloride, 0.3g/kg sodium benzoate, and 0.03g/kg EDTA, achieving antibacterial rates of 98% for bacteria and 96% for mold. The specific usage amount needs to be adjusted based on actual conditions. The recommended dosage in coconut juice beverages is 0.06-0.08g/kg. Combining it with other preservatives or preservation methods can significantly enhance its antibacterial activity through synergistic effects and reduce preservation costs.
